The Origins of Le Gavroche
Specialty: Traditional French Cuisine
Founded in 2008, Le Gavroche café-restaurant is located at 304 Notre Dame East. The Trapeaux family—Jean-Michel, his daughter Stéphanie, and his brother Christian—opened its doors to offer the people of Victoriaville and Quebec a style of cuisine they call “Franchouillarde.” To put it simply, this style draws inspiration from French bistros. This type of cuisine can also be described as simple, flavorful, and delicious.
It’s worth noting that from the very beginning, all food has been prepared and created on-site; furthermore, the pastry and bakery section is a major asset to their business.
A few years passed, and the restaurant continued to evolve through its ups and downs. In the fall of 2009, Christian Trapeaux returned home to France to continue his work in the bakery business. It was then that a major player joined the group of shareholders to fill the void left by Christian’s departure. Pierre Leblanc stepped in to lend his support for the good of the business.
Since life always brings new challenges, Stéphanie saw another opportunity in the arts and decided to step away from the business. She was delighted to find a new shareholder to enable the family business to continue its operations. That’s when Nikola Hidalgo joined the team, bringing with him a wealth of experience in the field. Having studied hospitality at Collège Mérici in Quebec City and having accumulated several years of experience in local restaurants, Nikola left his position as maître d’hôtel at the Manoir du lac William in St-Ferdinand to take on this new challenge.
